Avocado and Tuna Salad Recipe

Sliced avocado on red towel - Godmund

My friend Anthony showed me how to make this really awesome tuna salad a few months ago and I think i’ve made it about a dozen times since.

Its great, basically you substitute the mayonnaise for a ripe avocado. Add some diced vegetables, salt/pepper/spices, mix it up and you’re good to go!

1 ripe avocado skinned and cubed (the softer the better)
1 package drained tuna
1/2 cup desired vegetables (I use tomatoes)
1/2 tsp crushed or pickled garlic
salt and pepper/spices to taste

Being sick over the holidays

Orange Peels on the dining room table - Godmund
I had the fortune of being sick over christmas and new years weekends this year… Luckily, I hadnt planned any travel and I was only forced to cancel a couple lunches with friends… but the sad part was probably the half finished gingerbread house sitting on my dining room table (I have some shots of it somewhere)… and of course the beautiful christmas tree that I didnt get to share with any of my friends. Oh well, theres always next year. In the meantime I will be consuming large amounts of oranges and staying as fit as possible to ward off any nasty cold germs out there…

The Yurt emerges

I had the opportunity to visit with my old roommates Chris and Krista over the weekend in northern virginia. They have been building a beautiful Yurt for several months to house their yoga studio/practice. I was really impressed by how large it was on the inside (about 700 sqf). Very much looking forward to see how the space is finished/used.

This structure got my imagination churning!
